Southern Chicken Breasts With Sweet Potatoes

Ingredients:

  • 2 tbsp honey
  • 1 tsp salt
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 (16 oz) can sweet potatoes, drained , reserving 1/4 cup syrup
  • 1/4 cup raisins

Directions:

  1. In a large frying pan, heat oil over medium heat. Add chicken breast and cook until lightly browned, about 5 minutes per side. Drain on paper towels.
  2. Preheat oven to 350. Arrange chicken in a 13 by 9 inch baking dish.
  3. In a small bowl, combine evaporated milk, honey, salt, nutmeg and cloves. Pour over chicken.
  4. Bake 10 minutes. Remove from oven and arange sweet potatoes and raisins around chicken.
  5. Pour reserved 1/4 cup syrup over chicken.
  6. Return to oven and bake 40 minutes or until chicken is done.
