South African Chicken Kurma

Ingredients:

  • 2 1/2-3 lbs boiler fryer chickens (ready to cook)
  • 2 tbsp oil
  • 3 -4 tsp curry powder , to taste
  • 3 cloves garlic , left whole just smashed a bit
  • 1 tsp sugar
  • 1/2-1 tsp cayenne pepper
  • 1 cup water

Directions:

  1. Place all ingredients into a large stock pot with a lid.
  2. Bring to a boil on high heat for 15 minutes.
  3. Lower heat to medium.
  4. Simmer for one hour.
  5. Serve over rice.
