Solar Cooked Chicken Yummy Curry

Ingredients:

Directions:

  1. Marinade chicken for 2 hours or overnight.
  2. Combine chicken, garlic, ginger, red onion, curry powder, coconut milk, and 1 1/2 tablespoons of cilantro in a solar cooking pot and place in your solar cooker.
  3. Solar cook until chicken is fully cooked (about 2-3 hours).
  4. During the last 10 minutes of cooking, garnish with remaining cilantro and basil leaves.
  5. Adjust seasoning to your taste.
  6. Serve over rice.
