Socca (Garbanzo Chickpea Crepes)

Ingredients:

  • 1 cup besan
  • 3/4 cup water
  • 2 tsp olive oil
  • 1/8 tsp salt
  • 1 cooking spray

Directions:

  1. Mix all ingredients together to make a smooth batter. Allow to rest at least one hour.
  2. Heat a non-stick skillet over medium high heat. Spray with cooking spray. Pour in 1/4th of batter to make a crepe. Cook until top is dry. Flip and cook until other side is crispy. Serve hot.
