  1. Rub in the olive oil and salt, pepper,, let rest until the charcoal is hot..set up the grill for indirect heat with a drip pan under the meat side.. get the mesquite soaking in water,,,insert the temp probe into the center of the roast,, set target temp to med rare 135 degree.
  2. Temp is more important then time,,
  3. Keep the grill temp at 250 to 300 degrees.
