Ingredients:

Directions:

  1. Boil peeled potatoes
  2. Finely dice 1/2 onion and saute in olive oil and 'I can't believe it's not butter' until onion is translucent
  3. Mince garlic
  4. Drain potatoes and place in mixer on low setting
  5. Add garlic, onion, and 2 tbsp 'I can't believe its not butter' - blend until desired texture
  6. Pour contents into 9x9 baking dish and sprinkle dry onion on top
  7. Place in preheated oven 350 for 30-35 minutes until top is brown
