Ingredients:

Directions:

  1. In a large skillet bring 1 inch of water to boiling.
  2. Add sweet potatoes; reduce heat.
  3. Cover and simmer for 20 minutes or till tender.
  4. Drain well.
  5. Meanwhile, for sauce, in a small bowl combine orange peel, orange juice, molasses or brown sugar, salt, cinnamon, and allspice.
  6. Pour over potatoes skillet.
  7. Cook and stir gently till bubbly.
  8. Simmer, uncovered, for 5 minutes or till potatoes are glazed, spooning sauce over potatoes occasionally.
  9. Makes 4 servings.
  10. NOTE: If desired, substitute one 18-ounce can sweet potatoes for fresh sweet potatoes.
  11. Cut potatoes into 2-inch pieces.
  12. Place in a 1-quart casserole.
  13. Pour sauce over sweet potatoes.
  14. Bake, uncovered, in a 350 degree oven about 30 minutes or till heated through and sauce is bubbly.
