Simple Spinach Salad With Lemon Mint Dressing

Ingredients:

Directions:

  1. Place spinach leaves on a platter.
  2. Mix through the tomatoes or apple slices if using.
  3. Top with the alfalfa sprouts.
  4. Pour over the dressing or serve on the side.
  5. TO MAKE DRESSING:.
  6. With a sharp knife remove lemon rind taking as little pith (the white part) as possible.
  7. With the motor running, and using a metal blade, drop the lemon rind & mint down the tube.
  8. When lemon and mint are finely chopped add the sugar, lemon juice, vinegar & pepper.
  9. Process until well mixed.
