Simple Pineapple Muffins

Ingredients:

  • 1/4 cup butter
  • 2 tbsp sugar
  • 1 large egg
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1/8 tsp salt

Directions:

  1. Cream butter with sugar.
  2. Beat in egg.
  3. Stir in flour through pineapple just enough to moisten.
  4. Pour batter into greased muffin tins.
  5. Bake at 350°F about 30 minutes or until toothpick inserted in center comes out clean.
  6. Serve with whipped butter.
