Silky Cauliflower And Basil Soup

Ingredients:

Directions:

  1. 1) Trim cauliflower. Steam until soft in a large pot with cover. Drain
  2. 2) Carefully separate. Add pieces back to pot.
  3. 3) Add chicken broth milk, basil and spices.
  4. 4) Bring to a boil and simmer for about 10-15 minutes, until the cauliflower begins to disintegrate.
  5. 5) Add milk and, butter, and sherry. Heat on medium about 5 minutes.
  6. 6) Add sour cream and stir thoroughly.
  7. 7) Blend in a blender in batches or with a hand blender.
  8. 8) Top with fresh snipped chives.
  9. Can be served hot or cold.
