  1. Shell and devein the shrimp.
  2. In a large skillet, saute the onion in the oil until it begins fo color. Add the garlic and cook until the aroma rises. Add the tomatoes, ginger, saffron, cayenne,and cook for about 20 minutes over medium-low heat, until the sauce is reduced, stirring occasionally.
  3. Add the shrimp and cook from a minute to 5 minutes, depending on size - just until they turn pink. Stir in the chopped coriander and parsley at the end, and serve.
