Ingredients:

Directions:

  1. In dutch oven or other large pan, heat oil, garlic and onion until onion is tender.
  2. Add chicken and brown on both sides.
  3. Mix tomatoes, Italian seasoning and pepper, then add to chicken. Turn the chicken to coat well, then make certain that chicken pieces are both sitting on and covered in the tomatoes.
  4. Cover and cook over medium-low heat for 1 hour, occasionally turning the chicken pieces and making certain they are covered with tomatoes.
  5. Serve on a bed of rice or pasta, or with sides. (I like eating it with mashed potatoes and a vegetable on the side.)
