Sesame Raised Cornmeal Muffins

Ingredients:

  • 1 (1/4 oz) package dry yeast
  • 1/4 cup warm water
  • 1 cup cornmeal
  • 1/2 cup sugar
  • 1 tbsp salt
  • 1/2 cup butter
  • 2 cups scalded milk
  • 4 cups sifted flour
  • 1/4 cup sesame seeds

Directions:

  1. Dissolve the yeast in the warm water.
  2. Place the cornmeal, sugar, salt and butter in a large bowl.
  3. Add heated milk and stir occasionally, until the butter melts.
  4. Cool to lukewarm.
  5. Beat in 1 cup flour and eggs, then add the yeast.
  6. Beat in the remaining flour.
  7. Mixture will very stiff.
  8. Cover and let rise in warm place until doubled (approximately 1 hour).
  9. Stir down and fill 24 oiled medium muffin cups 3/4 full.
  10. Cover and let rise in a warm place for about 45 minutes, or until nearly doubled in bulk.
  11. Sprinkle with sesame seed.
  12. Bake at 400 degrees F for 15 minutes, or until golden brown.
