  1. Mix oil and flour in heavy glass measuring cup. Microwave 8 mins, stirring at 2 min intervals. Be careful it is very hot. Chrisy says it is done when it smells burned. I believe this is true because I have made many two roux gumbos. Once the roux is dark brown add to Gumbo pot. Add onions, bell pepper, and continue to cook the vegetables until tender. Add okra cook down some. at last add garlic and continue to cook two more minutes. Add tomatoes and broth. Cook for at least two hours. Add seasoning, seafood and cook a short time longer.
