Scrumptious Sweet Potato Pie

Ingredients:

Directions:

  1. Preheat oven to 350.
  2. Spread 1/4 cup brown sugar into the bottom of each unbaked pie shell. Set aside.
  3. TOPPING.
  4. Cut together butter, flour and brown sugar until crumbly.
  5. Add chopped pecans and mix well. Set aside.
  6. FILLING.
  7. Boil or steam sweet potato until tender.
  8. While the potatoes are still hot, add the butter and mash well.
  9. Combine the dry ingredients until will mixed to eliminate any possibility of flour lumps.
  10. Add the wet ingredients to the dry ingredients and stir in the mashed sweet potato until smooth.
  11. Pour the filling into two unbaked pie shells.
  12. Evenly distribute the topping across both pies.
  13. Bake pies on lower-middle rack until filling us set. (about 45 minutes).
  14. A knife inserted in the center should come out clean.
  15. Enjoy!
