Scottish Almond Shortbread

Ingredients:

  • 2-1/4 cups sifted all-purpose flour
  • 3/4 cup sifted confectioners' sugar
  • 1/4 tsp. salt
  • 1 cup butter
  • 1 cup finely ground almonds

Directions:

  1. Pre-heated oven to 325 degrees.
  2. Sift flour, confectioners' sugar and salt together.
  3. Cream butter.
  4. Fold in dry ingredients and gently mix thoroughly.
  5. Stir in almond extract and finely ground almonds.
  6. Chill for easier handling.
  7. Shape dough into balls.
  8. Place on ungreased baking sheets.
  9. Flatten into circles with the bottom of a drinking glass.
  10. Bake in a slow 325 degree oven for 20 to 25 minutes or until light golden brown.
  11. Remove from baking sheets immediately and cool on racks.
