Ingredients:

  • 1/4 cup sugar
  • 2 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/3 cup cold butter , cut into pieces
  • 1 egg
  • 1 1/2 tsp vanilla

Directions:

  1. Lightly grease baking sheet or line with parchment paper. Set aside.
  2. Place scone mix into a large bowl. Using pastry blender, cut in 1/3 cup butter until mixture resembles coarse crumbs. Make well in center, set aside.
  3. In small bowl, whisk together egg, 1/2 cup whipping cream and vanilla. Add egg mixture all at once to flour mixture. Using fork, stir until moistened and dough forms. Turn dough onto lightly floured surface. knead dough by folding and gently pressing dough for 10-12 strokes or until nearly smooth. Pat into an 8 circle. Cut into 8 wedges.
  4. Place on prepared baking sheet. Brush with additional whipping cream and sprinkle with additional sugar.
  5. Bake at 400 degrees in oven for 12-14 minutes.
  6. Variations:.
  7. Apple Scones: Add 1/2 tsp cinnamon and 1/4 tsp nutmeg to flour mixture; after cutting in butter, stir in 3/4 cup finely chopped peeled apple. Sprinkle tops with cinnamon sugar. Bake extra 2 minutes.
  8. Chocolate Chip Scones: Add1/8 tsp cinnamon to flour mixture and add 1/2 cup mini chips with cream mixture.
  9. Cranberry Pecan Scones: Add 1/2 cup dried cranberries and 1/4 cup chopped pecans, toasted, with cream mixture.
  10. Berry Scones: Add 1/2 cup fresh or frozen blueberries, raspberries, or chopped strawberries with cream mixture.
