Ingredients:

Directions:

  1. Mix almond flour, salt, paprika, thyme, ground pepper, and cayenne pepper
  2. Add Dijon mustard to the beaten eggs and mix well
  3. Dredge chicken breasts in egg mixture and then in flour mixture
  4. Place coated chicken in a 9x13 casserole dish
  5. Add 1/4 layer of olive oil to a large frying pan and heat on medium-high heat until the oil is very hot
  6. Place several pieces of chicken in the oil at a time and cook for 2 minutes on each side. Put the fried chicken back in the casserole dish.
  7. As you start frying your last batch of chicken, preheat the oven to 400 F
  8. Place the casserole dish in the oven and bake the chicken until cooked through, about 40 minutes.
