Ingredients:

  • 5 large potatoes
  • 2 tbsp olive oil
  • 1 medium onion

Directions:

  1. Wash potatoes thoroughly (do not peel them)
  2. Slice potatoes into 1/16 slices
  3. Slice onion
  4. Spray a shallow baking pan with your favorite cooking spray
  5. Line baking pan with a layer of potato slices
  6. Top layer of potatoes with some onion rings
  7. Sprinkle layer with onion, garlic and parsley
  8. Lay another layer over the first - repeat until all potato slices are used
  9. Bake uncovered for 30-45 minutes at 375 degrees F
  10. Serve hot - serves 4-6
