Sausage Stuffed Acorn Squash

Ingredients:

Directions:

  1. Cut squash in half, remove seeds.
  2. Place squash cut side down in a microwave safe dish.
  3. Cover and microwave on high for 10-12 minutes or until tender.
  4. Cook sausage and onion in a large skillet until sausage is no longer pink.
  5. Drain if needed.
  6. In a large bowl, beat egg and milk, stir in spinach, stuffing, cranberries and sausage mixture.
  7. Stuff squash with sausage mixture.
  8. Cover and microwave 2-3 minutes or until heated through.
