Saucy Ham 'n Eggs in Caraway Puffs

Ingredients:

Directions:

  1. Melt 2 tablespooons butter in 1/4 cup boiling water.
  2. Add 1/4 cup sifted flour and dash salt and stir vigorously.
  3. Cook and stir till mixture forms a ball that doesn't separate.
  4. Remove from heat and cool slightly.
  5. Add 1 egg, beating vigorously till mixture is smooth.
  6. Stir in caraway seed.
  7. Drop dough in two portions, 3 inches apart, on greased baking sheet.
  8. Bake in very hot oven (450 degrees) for 15 minutes.
  9. Reduce heat to 325 degrees; bake 25 minutes more.
  10. Remove puffs from oven; cool slightly.
  11. Slice off top and remove moist membrane in each puff.
  12. Filling:.
  13. 1 1/2 tablespoons butter.
  14. 1 1/2 tablespoons flour.
  15. 1 cup milk.
  16. 1/2 cup cubed cooked ham.
  17. 2 boiled eggs, sliced.
  18. 1 teaspoon chopped pimiento.
  19. 2 tablespoons chopped green pepper.
  20. Melt butter in saucepan over low heat; blend in flour, 1/4 teaspoon salt, and dash pepper.
  21. Add milk all at once.
  22. Cook and stir till mixture thickens and bubbles.
  23. Add remaining ingredients; heat through.
  24. Spoon mixture into caraway puffs; serve immediately.
  25. You can skip the caraway seed in the puffs and fill with ham or chicken or tuna or egg salad too.
