Ingredients:

  • 2 cups unseasoned hot cooked long-grain white rice simmered in water
  • 1/2 cup raisins
  • 1/4 cup rum
  • 2 (3.5-oz) vanilla pudding snack cups
  • dash of ground nutmeg

Directions:

  1. Start with hot cooked rice simmered in water. Combine raisins and rum in a microwave-safe bowl. Microwave at HIGH 2 minutes; let stand 5 minutes. Stir raisin mixture, vanilla pudding, almonds, cinnamon, and nutmeg into rice.
