Directions:

  1. Cut all the vegetable into bitesize pieces and put in a baking dish. drizzle with olive and/or sesame oil and pepper and seasalt and a dash of thyme and roast on 350 for 25-30 min.
  2. Cook couscous to package instructions and when couscous is done mix in with finished vegetables and romano cheese. add more salt and pepper if needed.
