Roasted Potato Peels

Ingredients:

  • 2 cups potatoes , peelings from about 4 baked , with a little potato

Directions:

  1. Heat oven to 450°. Place peels on a lightly oiled baking sheet; brush the peels with the butter.
  2. Bake until peels are golden and very crisp, about 20 minutes. Drain on paper towels.
