Roasted Garlic Mashed Potatoes

  1. Peel off outer layer of the flaky wrapping covering the garlic.
  2. Drizzle olive oil over garlic and cover with foil.
  3. Place in oven and roast for 20-30 min at 400 degrees.
  4. Dice potatoes and boil in salted water unill soft.
  5. Garlic is done when the pulp is soft and mushy.
  6. Remove the garlic pulp and add to potatoes.
  7. Add butter and cream.
  8. Mash well.
  9. Season with salt and pepper to taste.
  10. TIPS- add your cream slowly while mashing to prevent to much liquid in the potatoes.
