Roasted Eggplant with Orange Miso Glaze

Ingredients:

  • 1 medium eggplant , cut into 1/2 inch slices
  • 1 tbsp olive oil
  • 2 tbsp orange juice
  • 1 tbsp miso
  • 1 tbsp honey
  • 1 tsp orange zest
  • 1 dash cayenne

Directions:

  1. Place eggplant slices on a greased or sprayed baking sheet.
  2. Brush with olive oil.
  3. Bake at 400 F for ten minutes.
  4. Whisk remaining ingredients together.
  5. Turn eggplant slices over and brush with glaze.
  6. Bake for 5 minutes.
  7. Turn eggplant slices over and brush with glaze.
  8. Bake for 5 minutes more.
