Roasted Asparagus With Asian Peanut Sauce

Ingredients:

Directions:

  1. Preheat oven to 450.
  2. Snap off tough woody ends from each stalk.
  3. Arrange asparagus on a large baking sheet.
  4. Mix peanut oil with garlic then drizzle over spears and toss gently to coat well.
  5. Spread spears out in a single layer over baking sheet then place baking sheet in oven.
  6. Roast shaking pan once or twice to turn spears until asparagus is lightly browned.
  7. Combine peanut butter, soy sauce, lemon juice and pepper flakes in a small bowl.
  8. Use a rubber spatula to work ingredients together until well combined.
  9. Add enough water to make mixture thin enough to pour smoothly then adjust seasonings.
  10. Transfer roasted asparagus to a large platter then drizzle peanut sauce over top and serve.
