Ingredients:

Directions:

  1. Saute onion in non-stick pan sprayed with cooking spray. You can also add some chopped garlic (will not change calorie count).
  2. Add fresh spinach leaves, chopped, and continue to saute.
  3. Turn off heat and add 1/2 cup of your favorite lowfat tomato sauce, plus 2 tablespoons of parmesan cheese.
  4. Evenly divide vegetable stuffing between the 4 portabella mushrooms, reserving 2 tablespoons.
  5. Bake in 350 degree oven for about 30 minutes. Sprinkle remaining grated cheese on the tops and return to the oven for an additional 15 minutes until mushrooms are tender.
