Rhubarb Walnut Bread

Ingredients:

  • 1 1/2 cups diced rhubarb
  • 1/2 cup sugar
  • 2/3 cup cooking oil
  • 2 eggs
  • 1 cup milk
  • 1 tsp each salt and vanilla
  • 2 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda

Directions:

  1. Mix together both sugars with oil; add eggs and mix well. Add in milk. Add remaining ingredients, mixing well. Pour into two 9 x 5 inch loaf pans. Top each with 1 teaspoon of melted butter and 1 tablespoon of sugar.
  2. Bake at 350F for 1 hour or until done. Makes 2 loaves
