Ingredients:

  • 1 quart buttermilk
  • 2 cup sugar
  • 4 eggs
  • 5 cup flour
  • 1 tsp salt
  • 3/4 cup raisins optional
  • 1 cup pecans chopped , optional
  • orange zest optional

Directions:

  1. Place 3 cups All-Bran cereal in a bowl and pour on boiling water. Set aside to soak. In a large bowl, beat together buttermilk, sugar, oil, and eggs. Add flour, baking soda, and salt. Mix well. Stir in soaked cereal and remaining 3 cups cereal. Store in canning jars or other airtight containers for up to 1 month in the refrigerator.
  2. To bake, preheat oven to 400 degrees. Line muffin tins with paper cups or spray with nonstick coating. Fill muffin tins 2/3 full with batter and bake 20 minutes.
  3. *Optional ingredients: Stir in raisins, chopped pecans, and/or the zest of 1 orange when mixing the dry ingredients together.
