Refrigerator Bran Muffins

Ingredients:

  • 2 cups 100% bran flakes
  • 2 cups sugar
  • 1 cup shortening
  • 1 quart buttermilk
  • 5 cups flour
  • 1 tsp salt

Directions:

  1. Pour boiling water over 100% Bran.
  2. Cream together sugar and shortening.
  3. Add eggs and buttermilk; mix well.
  4. Stir in flour, baking soda, salt, All-Bran and 100% Bran and water.
  5. Stir until well mixed.
  6. Keep in large bowl covered in refrigerator.
  7. Bake as needed in greased muffin tins at 400°F for 15-20 minutes.
  8. *This batter will keep for several weeks.
  9. Makes great tasting hearty muffins!
