Red Cabbage And Kielbasa

Ingredients:

  • 1 medium to large head of red cabbage
  • 1 large onion slivered
  • 2 heaping tbsp of bacon fat (quiet diet police)
  • 1 tsp of salt
  • 1/4 tsp of pepper
  • 1/3 to 1/2 cup of light brown sugar
  • 1/4 tsp of ground cloves
  • 1 1/2 cup of water

Directions:

  1. Remove outer tough leaves of cabbage and wash well.
  2. Core cabbage and shred.
  3. Melt bacon fat. Remove from fire.
  4. Add cabbage, onion, apples, water and remaining ingredients (except the kielbasa chunks).
  5. Simmer, covered for one hour.
  6. Taste and adjust seasoning.
  7. Add kielbasa and simmer another half an hour.
  8. You may want to thicken the liquid ever so slightlly with a tablespoon of corn starch mixed with some cold water and add it when you add the kielbasa and let it come up to the boil and reduce back down to low heat for the duration.
  9. Love this served with pan fried cubed potatoes on the side.
