Ingredients:

Directions:

  1. Pre heat oven to 350. In a medium pan saute bacon until pieces are crisp not burnt. Remove and set aside on a paper towel. get rid of the bacon grease except 1 tablespoon.
  2. Add the red beans and rice, saute. Mix together so rice and beans are coated with the bacon grease.Add chicken stock,salt,pepper,chili flakes and smoked paprika. Mix and bring to a boil. Remove from heat and add the diced ham and olives.
  3. Transfer the mixture to a 6x6 or 6x9 baking disk.Cover with aluminum foil and put in oven for about 30-35 minutes.Top casserole with bacon and sliced swiss cheese and cook until cheese is melted.
