Ingredients:

  • 1 cup onion
  • 1/2 cup celery
  • 1/2 tsp cayenne
  • tsp thyme
  • 8-10 cups of water

Directions:

  1. 1. Soak beans overnight.
  2. 2. Heat oil in large saucepan over medium-high heat. Sauté onions, pepper, celery, salt, cayenne, pepper and thyme about 5 minutes.
  3. 3. Add bay leaves, ham, and sausage; sauté 5 more minutes.
  4. 4. Add beans, garlic and enough water to cover beans. Bring to a boil, reduce to medium and simmer uncovered, stirring occasionally 1 to 1 1/2 hours. Add water if need be.
  5. 5. Mash 1/2 mix against side of pot. Cook another 1 1/2 hours (adding water).
  6. 6. Remove bay leaves before serving.
  7. 7. Serve with rice.
