Really Good Rice Pudding

Ingredients:

  • 6 cups whole milk
  • 3/4 cup carolina rice
  • 3/4 cup sugar
  • 2 tsp vanilla
  • 1/4 tsp salt
  • 1 tsp cinnamon

Directions:

  1. Rinse a medium saucepan with cold water (don't dry).
  2. Pour in milk & bring to a boil over medium heat.
  3. Stir in rice & return to a boil. Reduce heat, and simmer, uncovered.
  4. Until rice is tender (about 55 minutes) stirring occasionally.
  5. Meanwhile, in a small bowl combine cream, sugar, yolks, vanilla.
  6. And salt. Set aside.
  7. When rice is tender, put a small amount of rice mixture in yolk mixture to temper and then add to the pot. Heat to a slow boil. Remove from heat.
  8. And pour into a 2 quart dish. sprinkle with cinnamon and enjoy!
