Ingredients:

  • 1 cup raisins
  • 3/4 cup plus 1 tbsp all-purpose flour, divided
  • 3/4 cup wheat bran
  • 1/4 tsp baking soda
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 3/4 cup buttermilk
  • 3/4 to 1 cup chopped pecans

Directions:

  1. Combine raisins and 1 tablespoon flour; stir well, and set aside.
  2. Sift together 3/4 cup flour, bran, baking powder, soda, sugar, and salt in a large mixing bowl. Combine egg and buttermilk; add to dry ingredients, stirring just until moistened. Stir in dredged raisins and pecans.
  3. Spoon batter into greased muffin pans, filling half full. Bake at 400° for 17 minutes or until golden brown.
