Ingredients:

  • 1 cup quinoa
  • 1 cup water
  • 2 cups oatmeal
  • 1/4 cup pumpkin seeds
  • 1/4 cup nuts
  • 1/2 cup honey
  • 2 tbsp cinnamon
  • 1 -2 tsp almond extract

Directions:

  1. Preheat oven to 275°F.
  2. Microwave quinoa in 1 cup water for 5 minutes. Careful it does not boil over.
  3. Combine dry ingredients.
  4. Add quinoa and any remaining water to the dry ingredients.
  5. Combine butter with honey and almond extract and add to dry mixture.
  6. Spread evenly on parchment lined baking sheet.
  7. Bake for 1/2 hour to an hour until lightly golden. Stir every 15 minutes while baking.
  8. Remove from oven and allow to cool. Store in air tight container.
  9. Serve with yogurt and fresh or dried fruit.
