Pumpkin Spice Pancakes

Ingredients:

  • 2 1/3 cups pancake mix
  • 2 tbsp sugar
  • 2 eggs
  • 2 tbsp canola oil
  • 8 oz whipped topping, thawed (1/2 tub)
  • 1 tbsp sugar
  • 1/2 tsp vanilla
  • 1/2 tsp ground nutmeg

Directions:

  1. Heat griddle and prepare with cooking spray.
  2. In a bowl, combine pancake mix, sugar and pumpkin pie spice.
  3. In a separate bowl, beat together eggs, water, pumpkin and oil until smooth.
  4. Whisk together the pancake mixture and the pumpkin mixture until moistened.
  5. Pour 1/4 cup batter per pancake onto hot griddle. Cook 1-2 minutes per side until golden brown.
  6. In a bowl, combine whipped topping, sugar, vanilla and nutmeg. Do not over mix.
  7. Serve hot pancakes with the whipped topping.
