Pumpkin Spice Cookies

Ingredients:

  • 1 1/2 cups wheat flour
  • 1 2/3 cups oats
  • 2/3 cup prune, pureed
  • 1 cup pumpkin
  • 1/4 cup milk
  • 1 tsp vanilla
  • 1/2 tsp baking powder

Directions:

  1. Combine all wet ingredients.
  2. Stir all dry ingredients together.
  3. Add to the wet ones.
  4. I use my ice cream scoop which holds approximately 1/4 cup batter/dough. Going on that, you'll get 12 extremely large cookies.
  5. Bake at 350°F for 15 minutes.
