Ingredients:

  • 3 large eggs
  • 1 cup sugar
  • 2/3 cup pumpkin
  • 1 tsp cinnamon
  • 3/4 cup flour
  • 1 cup nuts
  • 2 tbsp margarine
  • 1/2 tsp vanilla

Directions:

  1. Line large cookie sheet, 17 x 11 inches (or jelly roll pan) with wax paper.
  2. Spray with Pam non-stick cooking spray.
  3. Combine eggs, sugar, pumpkin, baking soda, cinnamon, flour and nuts and pour on wax paper.
  4. Can sprinkle a few additional nuts on top of this if desired.
  5. Bake at 375 degrees for 15 minutes.
  6. Turn out onto powdered sugar sprinkled towel.
  7. Roll like jelly roll (towel and all).
  8. Let cool 30 minutes; unroll.
  9. Remove wax paper.
  10. Mix all filling ingredients together and spread over pumpkin roll.
  11. Roll back up again like jelly roll.
  12. Refrigerate.
  13. Chill before slicing and serving.
