Ingredients:

Directions:

  1. Toast rice in dry cast iron pan until lighty golden, shaking pan occasionally, about 5-7 minutes. Remove and set aside. Toast almonds in same manner and set aside.
  2. Cook bacon in same pan until very crisp. Remove to cool and then crumble; set aside.
  3. Saute onions, peppers and garlic until almost tender, about 10 minutes. Add rice, stir and add broth. Cook 5 minutes. Add peas and cook 5-8 minutes.
  4. Add cream and stir. Let simmer to allow liquid to evaporate and for mixture to thicken. Season with salt and pepper to taste.
  5. Serve with bacon and almonds sprinkled on top.
  6. Enjoy!
