Ingredients:

  • 3/4 cups morning star better n eggs
  • 1 tbsp butter cut into pieces
  • 16 oz frozen choped spinached
  • 8 oz kraft fat free shredded cheedar cheese

Directions:

  1. Defrost Spinach, and SQEEZE it dry. Beat egg sub. and cottage cheese together.
  2. I always add some garlic powder, salt, pepper, and a little nutmeg, to mine, but I didn't put it in the recipe, you dont have to add these spices, but it helps, I also like to sometimes add red pepper flakes, it all depends on who is gonna be eatting it.
  3. Then add in the Spinach and Cheese, dump everything into a 8x8 imch pan, I just spray the pan with cooking spray like pam. Then push the pieces of butter down into it, all over. Bake at 350 for about 1 hour, or till set. I would start checking after 45 min.
  4. You can make this with the full fat stuff, and its REALLY GREAT, but for diets, this versions is very good too.
  5. I serve with tomato's....
  6. Enjoy!!!!
