Directions:

  1. Mix all ingredients together.
  2. Spray no stick spray in large frying pan.
  3. Spoon dollops into pan and fry until set on one side.
  4. Flip and flatten with spatula.
  5. Fry until golden.
  6. Serve hot with sour cream, mashed avocado and salsa and a spinach salad for a light summer meal.
