Ingredients:

  • 3 cups sugar
  • 1 1/2 cups buttermilk
  • 1/2 tsp baking soda
  • 2 cups pecan halves
  • 2 tsp vanilla

Directions:

  1. Line 2 baking sheets with waxed paper or buttered foil.
  2. Combine sugar, buttermilk and baking soda in heavy large saucepan and stir once.
  3. Bring to a boil over medium high heat; reduce heat and boil gently without stirring for about 20 mins.
  4. Remove from heat and add butter, beating with wooden spoon until mixture begins to lose its shine and thickens slightly, about 5-7 mins.
  5. Quickly stir in nuts and vanilla (mixture will firm almost immediately) Drop by spoonfuls onto baking sheets.
  6. Let stand until completely cool.
