  1. Melt the dripping into a very large skillet over medium high heat. Add the remaining ingredients to the skillet, salting and peppering as you go.
  2. Allow the mixture to brown until crispy.
  3. When ready to turn, take a spatula and loosen the mixture around the edges. Use a platter larger in diameter than the skillet. Invert the platter over the pan and very carefully turn the mixture out onto the platter. Add a bit more dripping to the pan if necessary, then slide the potato mixture back into the pan with the browned side up. Now allow the underside to brown, as well.
