Ingredients:

  • 1 egg
  • 2-4 medium-lrg baking potatoes
  • 1/8 cup finely chopped red onion
  • 1/2 cup mayonnaise
  • 1/4 cup mustard
  • pinch of salt and pepper

Directions:

  1. In a medium sauce pan half filled with water and a pinch of salt add your potatoes and your egg.Put on to boil over medium-high to high heat.Set timer for 15 minutes for your egg.When your egg is done reset your timer for 30 minutes for your potatoes.
  2. When your egg is done place it in a small bowl and run it under cold water until touchable.While the egg is still warm peel the egg shell off and set aside.
  3. While waiting for your potatoes start chopping your veggies.When your all done chopping your veggies place them in a medium size bowl.Set aside.
  4. When your potatoes are done drain the water from the sauce pan and run cold water over the potatoes until touchable with your bare hands.With a tablespoon start scraping off the potatoes skins.Now slice your potatoes or quarter them in even slices or quarters.Add them to your veggies.
  5. Now add your mayonnaise,mustard,salt and pepper.Mix until everything is coated well.With egg slicer slice your egg and fan it out on top of your potato salad.
  6. Serve right away or let it hang out to chill in the frig until you're ready to serve.
