Ingredients:

  • 2 cup flour
  • 2/3 cup butter
  • 1/4 tsp salt
  • 1/4 cup sugar
  • 1/2 cup apricot jam
  • butter to spread on scones

Directions:

  1. Cut 2/3 c butter into flour, baking powder, sugar, and salt.
  2. Add eggs.
  3. Mixture will be moist.
  4. Knead lightly-10-12 times.
  5. Pat out into a rectangle1 inch thick on lightly floured surface
  6. Cut into 2 inch circles with cutter
  7. Bake on greased baking sheet at 425degrees for about 15 minutes until golden brown.
  8. Split open while still hot.
  9. Butter each half and then spread with jam.
  10. Top each half next with cheese and serve warm.
  11. Makes about 12 halves.
