Pork Tenderloin With Kudzu Salsa

Ingredients:

Directions:

  1. Combine first 5 ingredients in a large shallow dish or heavy-duty Ziploc plastic bag; add pork.
  2. Seal or cover and marinate for 6-8 hours in the refrigerator.
  3. To prepare salsa, combine all ingredients, cover and chill until ready to serve.
  4. Preheat oven to 400F and spray a roasting pan with cooking spray.
  5. Remove pork from marinade, discarding marinade.
  6. Stir together honey and brown sugar; brush pork with honey mixture.
  7. Place meat in prepared roasting pan; sprinkle with oregano and cumin.
  8. Bake for approximately 25 minutes or until your meat thermometer reaches 160F.
  9. Cut pork into slices; serve with Kudzu salsa.
