Ingredients:

  • 4 pork loin chops , 1/2 to 3/4 inch think
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 medium onion , cut into thin slices
  • 1 (8 oz) can stewed tomatoes

Directions:

  1. In 10-inch skillet, brown chops over medium heat.
  2. Sprinkle salt and pepper on chops.
  3. Top each with 2 -3 onion slices, 1 green pepper ring, 1 tablespoon rice and 1/4 cup tomatoes.
  4. Reduce heat; cover and simmer until done, about 45 minutes. Add a small amount of water if necessary.
