Porcini Brocolli Quinoa Pilaf

Ingredients:

Directions:

  1. Soak the dried mushrooms in 1 cup warm water for at least an hour.
  2. Cut the mushrooms into bite size pieces.
  3. In the pot you will use to boil the rest, pour in the quinoa seed and let them toast up for about 5 minutes.
  4. Pour the mushroom water plus plain water as needed to get 1 cup into a pot over the Quinoa and bring to boil.
  5. Stir in salt, cayenne, black pepper and onion powder, stir again.
  6. Cover and reduce heat and let simmer for about 15 minutes.
  7. Add the brocolli florettes, mushrooms and chopped mint to the quinoa, cover and let simmer for another 10 minutes.
